With the money saved by going trayless, Chartwells was able to add many new items that improved the old menu, said Chartwells Foodservice Director Curt Coshenet. Changes include new additions to the salad bar, new meat options in the deli bar, soymilk, frozen yogurt and new hot items, such as Roman Chicken.

One item that will be added to the menu is baked cod. “This will be a great addition for Lent,” Coshenet said. “Typically, Catholics do not eat meat on Fridays of Lent, and the added cod will give a meatless entrée option.”

In addition to the added extras on the menu, Chartwells is allowing students to have a take-out option in the cafeteria. Students will be allowed to get an 8-10 ounce take-out box when scanning their ID cards to grab food to go.

“This allows students busy with athletics, (activities or work) to get their full hot meals on the run,” said Coshenet.

Students will also be allowed to use their own drink containers in the cafeteria and will be allowed to use 24-ounce bottles to take a beverage of their choice out of the cafeteria.

To supplement these new changes, Chartwells is conducting an online survey open for SMU community members to take. Students can find the survey on the Chartwells website. “We want to do our best to meet every (student’s) need,” said Coshenet.
